Let me just start by saying that i hate and despise math. HATE it. it plagued and tormented me for 12 years, and day i finished my very last EVER math class, i literally jumped and shrieked with joy. having said that, here is one equation i can get behind.

baddd week + ridiculously good pesto pizza = everything seeming much better.

it’s the truth. i was just having a mundane day of high energy bills and trips to walmart, which by the way is a horrific combo, and then for no real reason i decided to make a pesto pizza that i saw a recipe for on the pioneer woman’s blog. i also cranked up the AC to 80 degrees, to combat said high energy bill. but that’s neither here nor there. who really cares if your house is a tad stuffy when the lovely smell of pesto pizza is wafting through the (warm) air?? not me, or ida, who seemed pretty happy with the scents too.

here’s to a better week next week! i swear there’s either a full moon or something in the water or SOMETHING, it seems like this week has just been drama central…anyway, make this pizza. it’s extremely delicious:)

Pesto Pizza

Either store-bought or homemade dough (I used ready-made from publix)

Pesto

Mozzarella cheese

Portobello mushrooms

Tomato, sliced thinly

Salt

Pepper

Olive oil

garlic powder

Pre-heat oven to 400 degrees. Roll out pizza dough onto a lightly greased baking sheet. Lightly dribble with olive oil. Spread pesto sauce out evenly, then sprinkle on grated cheese, sliced mushrooms,  and tomatoes. sprinkle with salt, pepper and garlic powder. bake for 20-25 minutes until crust is lightly golden and bubbly. Eat!
